The Bikini Cocktail
Makes enough for 10 guests
For the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Drink (yields 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
For the Cordial: Place the listed components inside a pan, bring to a light boil, agitating until the sugar dissolves. Next, turn off the burner and leave to cool completely. Transfer into a sterilised bottle, cap it and refrigerate it in the refrigerator, where it will keep for around four weeks.
For the Batch Mix: Mix all the liquids into a sizeable container, allow it to infuse for one hour, then filter it best through cheesecloth, to ensure it's perfectly clear.
For serving: Add 85ml of the premix into your stirring glass packed with ice, and agitate lightly for about 60 seconds to cool it down. Filter to a frosted cocktail glass or a similar vessel, garnish with some cranberries and finish using a light spray of the essential oil over the top.
